Waldorf Salad

6-8 Apples, Preferably sweet and firm like Gala

4 Ribs of Celery

1 Cup Walnuts

2 Cups Mayonnaise

2 Cups Plain Yogurt (Greek or regular)

Zest of half a lemon

Core the apples and cut into bite size chunks. Chop the celery and combine with apples. Mix mayo and yogurt with the apples and celery. Add the zest too. Toast the walnuts and add them to the salad, mixing well. Serve over romaine

Makes 6-8 Servings

I loved the waldorf salad! I also made one with a few modifications. I added fat-free Chobani vanilla greek yogurt, used Miracle Whip, and added some cinnamon. I would have added the fantastic Spiced Pecans I got at "Les Mis", but I ate them all before I got them chopped up! I'm sure they would have made a wonderful change from the walnuts! Maybe next time!
