Nick's Picks: Smokehouse Cheddar Chicken

A bold fusion of smokey and spicy flavors sure to please your heat seeking palettes!

1 1/2 Pounds Chicken Breast
1 7oz Can Chipotle Peppers
1/2 Cup Ketchup
1 Garlic Clove
1/4 cup Oil
1 Tsp Chilli Powder
1 Tsp Salt
1 Tbsp Lime Juice
1 Tbsp Cilantro
Sharp Cheddar Cheese

Combine the peppers, ketchup, garlic, oil, salt, lime juice and cilantro in a food processor or blender. Blend until smooth. Marinate the chicken over night.
Grill or broil the chicken breasts with as much (or as little) marinate as you would like. The more marinade, the spicier it will be! Make sure to cook the chicken all the way through, at least to 165 degrees.
Melt a slab of sharp cheddar cheese over each chicken and serve
