1/2 Cup Softened Butter

1 Cup Brown Sugar

2 Eggs

1 Cup Molasses

1 Cup Buttermilk

3 Cups Sifted Flour

2 Tsp Baking Soda

1 Tsp Cinnamon

2 Tsp Ground Ginger

1/4 tsp Ground Cardamom

1 Cup Heavy Cream

1 Cup Powdered Sugar

1 Tsp Vanilla

In a large bowl, cream together the sugar and butter. Add the eggs one at a time and mix well. Add molasses and mix well. In a separate bowl, combine flour, baking soda and seasonings. (You can substitute ground cloves for cardamom) Alternately add the flour mixture and the buttermilk to the batter. Scrape down the sides of the bowl and mix well. Place in a well greased 9x13 pan and bake at 350 degrees for about 30 minutes or until fully baked.
For the whipped cream, whisk the cream, sugar and vanilla with a hand mixer or a whisk until stiff peaks.
Serves 12
