Nick's Picks: Hearty Chili

This makes a lot of chili (4 gallons) but you can cook it up and freeze it, or take it for a dish to pass if you’d like! It does have some spice to it, so don’t put in the hot sauce and cayenne pepper if you’re one that doesn’t like the heat!


  • 10 lbs Ground Beef
  • 1 Large Yellow (Spanish) onion chopped
  • 6 Cans Dark Red Kidney Beans rinsed and Drained (15.5 oz size)
  • 4 Cans Crushed Tomatoes (28 oz size)
  • 1 Tbsp Salt
  • 1 Tbsp Pepper
  • 1 Tbsp Powdered Garlic
  • ¼ Cup Paprika
  • 1 Tbsp Cayenne Pepper
  • 1/3 Cup Dark Chili Powder
  • 1/3 Cup Hot Sauce (Franks’)
  • 2 Cups Ketchup
  • 1 Tbsp Beef Base (or one bouillon cube)
  • ½ Gallon Water

Brown in the beef in a large pot. Drain Excess fat. Sautee onions in the pot while beef is draining (about 1-2 minutes) Add beef back to pot and cook onions until tender.

Add the rest of the ingredients and seasonings and bring to a very low simmer. Continue to cook for about 2 hours at least.

Serve with cornbread or rice and enjoy!

Just listened to the show with Nick and his chili recipe. My husband loves chili and I'm sure this will be a favorite of his. My personal feelings about the heat? Not so sure I would like it, but chili is a big hit in our family and its a healthy and filling dish to serve on these cold nights. Thanks for the new twist to an old standby recipe and keep those recipes coming! Love this segment of the morning show.

Great Recipe! I made half a batch for my family. My family likes the taste of cumin in chili so I added 1/2 cup. It was perfect for our taste. I have made 3 of Nick's recipe's so far and have not been disappointed. Friends and family think I am a great cook now. I had to burst their bubble and give all the credit to Nick. Great recipe. I made it as chili 5 ways. piled up as follows - Rice, chili, black beans, onions, and cheese. I made it as half a batch as a dish to pass and I should have made a full batch. It was a big hit and all of it was gone in about 10mins. Thanks for the great chili recipe Nick!!
