Happy Summer!! Caribbean Chicken:
1 1/2 Pounds Chicken Breasts Orange Juice 3 Cups
1 Pineapple Peeled Cored and Chopped 2 Mangoes RIPE! Peeled and chopped 1 Jalapeno Pepper Seeded and minced 1 Red Pepper Seeded and Minced 1/2 Vidallia Onion Minced
The night before, soak the chicken in the OJ. Cover and refrigerate. In a separate bowl, combine the fruit, peppers and onions. Add salt. Cover and refigerate.
In a large skillet, heat a little oil. Drain the OJ and discard the juice. Brown the chicken on both sides and turn to cook through (165 degrees in the center) Serve with the salsa and enjoy!!
