  • 4-6 Cod Loin Filets
  • About 6 slices white bread, crusts removed
  • 1 Tbsp Butter melted
  • 1/8 Tsp Black Pepper
  • 1/4 tsp Salt
  • 1/4 Tsp Garlic
  • 1/4 Tsp Ginger
  • Olive Oil

Place bread slices in a food processor and pulse until crumbs. Transfer to a bowl and add melted butter and seasonings. Toast bread crumbs in a oven at 350 degrees until golden brown. Remove and crumble further if necessary. Pat the fish dry with paper towels. Heat a large skillet until hot. Brush cod with olive oil and coat with bread crumbs. Sear fish on both sides for about 4 minutes on each side. Cook thoroughly and serve!
