Nick's Picks: Balsamic Strawberry Salad

The sweetness of the strawberries compliments the tartness of the balsamic!

1 Cup Balsamic Vinegar
1 Pound Fresh Strawberries de-stemmed and quartered
1 cup Sliced Almonds
1 Small red Onion Sliced Thin
Spring Mix

In a small sauce pot, boil the vinegar until it reduces by half. It should coat a spoon. Place in fridge to cool

Assemble salads with strawberries, almonds and onions if desired. Drizzle vinegar reduction over salads and serve!

Serves 6

I made this salad. Nick failed to tell us how strong the vinegar was in the air when boiling it but it was very good none the less.

OH! Nick, this recipe is delicious! I never would have thought about this great combo on my own. I can't wait to try it again, and share it with others. I'm sure if anyone had a nut, greens, or onion preference that it would switch out easily. It is really, truly all about the strawberries and the balsamic reduction!! Super yummy!
