Bacon Tomato Cups

8 slices of bacon, crisply cooked and broken into bits 1 medium tomato, seeded
1/2 small onion
3/4 cup swiss cheese, grated
1/2 cup mayonnaise
1 teaspoon basil
1 can flaky layered biscuits (10 oz.)
Mix all ingredients. Separate each biscuit into 3 layers. Lay across mini muffin tin and push into cups to form miniature pie crusts. Fill cups with mixture. Bake at 375° for ten to twelve minutes. Serve warm.

I am not able to catch your verbal instructions, so I need to ask this question. When you say seeded tomato do you mean take the seeds out so all you have is the skin and flesh of the tomato left to work with? I am also going to assume that you dice or chop both the tomato and onion?

Yes Charles you are correct! Remove the seeds from the tomato and chop both the onion and tomato. Also spray your muffin cups with pan release first!

These are so yummy---I did not seed the tomatoes and my biscuits weren't flaky enough to pull apart but I cut them and fit them in the cups. Turned out great! Thanks for sharing.
