Auggie’s Turtle Pie


1 - 9 inch baked pie shell

12 caramels, unwrapped

1 - 14 oz. can sweetened condensed milk – divided

¼ cup butter

2 oz. semi-sweet chocolate chips*

2 eggs

2 Tablespoons water

1 teaspoon vanilla extract

Pinch of salt

½ cup chopped pecans


Preheat oven to 325 degrees.

In saucepan, melt caramels and 1/3 cup sweetened condensed milk over low heat. This should take around 4 minutes.

Pour caramel over baked pie shell.

In another saucepan melt chocolate and butter. This also should take around 4 minutes. Remove from heat.

Beat eggs, the rest of the sweetened condensed milk, water, vanilla and salt.

Stir chocolate mixture into egg mixture until completely combined.

Pour over caramel in pie shell. Top with pecans.

Bake in preheated oven until center of pie is set…about 35 minutes.

Cool at room temperature for an hour, then chill in refrigerator.

*you can use unsweetened or milk chocolate depending on your preference.
