Waffles
Recipe:
Popular Waffles
2 Eggs
2 cups Buttermilk
2 cups All-Purpose Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1/4 cup plus 2 Tbsp. Shortening
Richer Waffles
3 Eggs
1 1/2 cups Buttermilk
1 3/4 cups All-Purpose Flour
2 tsp. Baking Powder
1 tsp. Soda
1/2 tsp. Salt
1/2 cup Shortening
Heat waffle iron. Beat eggs; beat in remaining ingredients with rotary
beater until smooth.
Pour batter from cup or pitcher onto center of hot waffle iron. Bake
about 5 minutes or until steaming stops. Remove waffle carefully.
About eight 7-inch waffles.
*If using self-rising flour, omit baking powder and salt.
Note: To substitute milk for buttermilk, separate eggs, beating egg whites
until stiff; increase baking powder to 4 teaspoons; omit soda and fold egg
whites into batter.
Variation:
*Blueberry Waffles: Sprinkle 2 tablespoons blueberries over batter for
each waffle as soon as it has been poured onto iron.
