White Chicken Chili
4 cups chicken, cooked and shredded (see instructions below)
4 cans white Northern beans
3-4oz. cans green chilis chopped
6 cups chicken broth
1 t. ground Mexican oregano (found at Tops and Wegmans)
¼ t. cayenne pepper
2-3 t. cumin
2 medium onions and 3-4 cloves garlic sautéed in 3 T. olive oil
Boil chicken with 1 onion quartered 1 bay leaf, black pepper and water to cover. Reserve stock for soup. Shred chicken and add all ingredients and simmer.
