Penne with Marinated Tomatoes
Recipe:
1 lb Cherry Tomatoes
1/4 c. olive oil
4 garlic cloves
1 tsp. course sea salt
1 lb penne pasta
10 fresh basil leaves (shredded)
1/2 lb bocconchi (bite size fresh mozzarella-each piece cut in half)
Toss tomatoes, oil, 1 tsp. crushed red pepper, and sea salt in large bowl. Whack garlic with side of knife and toss in bowl (this releases the oils) -- let marinate at room temperature for 30 minutes.
Bring 6 quarts of salted water to a boil in an 8 quart pot. Stir in penne and return to boil, stirring frequently. Boil about 8-10 minutes. Remove garlic from marinated tomatoes and toss in basil. Drain penne and add to the tomatoes. Check flavoring and add salt and crushed red peppers to taste.
Gently stir in cheese and serve!
