Oatmeal Rolls
Recipe:
1 ¼ cups boiling water
1/2 cup butter
1/3 cup brown sugar
¾ teaspoon sea salt
1 cup quick cooking rolled oats
1 pkg dry yeast
¼ cup water (warm, not hot, to dissolve yeast in)
4 cups unbleached flour
1 egg
Pour boiling water over butter, brown sugar, salt, and oats. Let stand until lukewarm, then combine mixture with the yeast dissolved in ¼ cup warm water. Add 2 cups flour and beaten egg. Beat until well blended. Add remaining flour, a little at a time, to make a soft dough. Turn on slightly floured surface and knead until smooth and elastic. Place in greased bowl. Cover and let rise in warm place until doubled in bulk. Punch down and let rise again. Shape in rolls and when double in bulk, bake in 350 degree oven for about 20-25 minutes, according to size.
